Almond Joy Butter

Where have I been you ask?! Well, since my last post I've had a baby! A beautiful 7lb 2 oz baby girl by the name of Clarabelle. Awww.. how sweet! Yeah I know I'm a bit old fashioned. Anyways. Here's a healthy recipe inspired by my lil bundle of joy,because sometimes you feel like a nut....

  ALMOND JOY BUTTER



2 cups raw almonds,toasted
1 cup shredded coconut, toasted
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
1/2 teaspoon salt


  Preheat oven to 350 degrees. Toast coconut and almonds in oven for 5 minutes. First place coconut in food processer for 3-5 minutes. Scrape sides of mixer then add almonds and mix for 10 minutes. Scrape sides and add chocolate,vanilla extract, and salt. Continue mixing for 30 seconds to a minute. Finally, scrape sides of mixing bowl and give it a few more pulses just for good measure. Enjoy!!!

If you're wondering what to do with your newly made nut butter here's a couple of suggestions.
1) eat it with a spoon
2) smear some nut butter on some whole grain toast accompanied with
 banana slices for a healthy and satisfying snack.
