Mocha Cookie Sandwiches


2 cups of all purpose flour
1/4 cup of unsweetened Hershey's cocoa powder
1 tsp baking soda
1/2 tsp salt
2 sticks(1 cup) butter
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 1/4 tsp *Double Strength Madagascar Bourbon Pure Vanilla Extract
1 tsp of NesCafe Clasico instant coffee
1 cup semi-sweet chocolate chips
1 16.2 container of Duncan Hines Whipped Fluffy White Frosting


Let butter and eggs sit at room temperature for about 15 minutes for best results.

Preheat oven to 350 degrees.

Mix flour, cocoa powder, baking soda, and salt in a mixing bowl. Set aside.

Combine sugars and butter in a mixing bowl. Mix until well blended.

Add eggs and instant coffee mix well. Slowly add dry ingredients.

Stir in chocolate chips.

Drop rounded spoonfuls of dough with a *1" cookie scoop* unto a sheet pan and bake for 9 minutes. Let cool 2 minutes on a wire rack.

After cookies have cooled spread a tsp or so of whipped frosting on the bottom of one cookie. Top with another cookie of even proportion. Enjoy!!!!

Monkey Bread Pudding

This recipe came along when I had some leftover monkey bread and didn't want to toss it!! So i'll include the monkey bread recipe and then the bread pudding recipe just incase you don't have left over monkey bread! lol If you do.. then good on ya mate!!


3/4 cup(or 1/2 cup) granulated sugar
2 teaspoons cinnamon
4 7.5 oz cans of Pillsbury buttermilk biscuit cans
1/2 cup butter/margarine,melted
3/4 cup packed brown sugar

Grease a 12 cup bundt pan.
Mix sugar and cinnamon in a gallon sized baggie. Cut each biscuit into quarters. Shake quarters in bag to coat. Place in pan. Mix melted butter and brown sugar pour over biscuits.
Bake at 350 degrees for 40 minutes. Cool 5 minutes. Turn upside down. Serve warm.


Leftovers!!
Place left over monkey bread into a 2 quart baking dish.

Mix together:
2 eggs, slightly beaten
2 cups milk ( I used Pet Milk)
1/4 cup butter, melted
1/2 cup sugar
1 teaspoon vanilla (I used Mexican)
2 tsp Pampered Chef Sweet Cinnamon Sprinkle (optional)

Pour ingredients over monkey bread and bake in a preheated oven at 350 degrees for 50-55 minutes. Let cool. Serve warm!! Great with vanilla icecream. Or not. You decide! ;)

Mocha Brownie Pudding Cake

2 cups flour
1 1/2 cup granulated sugar
4 T(tablespoons) unsweetened cocoa powder
4 t(teaspoons) baking powder
1/2 t salt
1 cup milk
2 T cooking oil
1 T vanilla
1 cup chopped walnuts(optional)
2 Nescafe instant coffee packets (0.07 oz each)
1 1/2 cup brown sugar
1/2 cup unsweetened cocoa powder
3 cups boiling water
Vanilla icecream (optional)


Preaheat oven to 350 degrees.

Grease a 9x12 baking pan (or use a 9x12
Pampered Chef stoneware,no greasing)

In a medium bowl mix together the first 5
ingredients. Stir in milk, oil, vanilla,
and nuts.

Pour batter into baking pan.

In a small bowl stir together the coffee,
brown sugar, and cocoa powder. Stir in boiling water.

Slowly pour sugar mixture on top of batter in baking pan.

Bake for 40 minutes. Cool on wire rack for an hour. Serve warm.

Blackberry Cobbler

1 stick butter
1 cup flour
3/4 cup sugar (plus one packet of Stevia if you dare)
1 T (aluminum free)baking powder
1/8 tsp salt
2/3 cup milk
2 cups blackberries

Melt butter in a 2 quart casserole dish.

Preheat oven to 350 degrees.

Combine flour, sugar, baking powder, and
salt in a medium mixing bowl. Add milk.

Pour mixture over melted butter. DO NOT STIR.

Spoon blackberries over mixture. DO NOT STIR.

Bake for 45 minutes or until golden brown.

Let cool slightly and enjoy with vanilla icecream!!!

Choco Oat Chip Cookies

1 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
1 1/4 cup brown sugar
1/2 cup granulated sugar
2 sticks butter (at room temp.)
2 eggs
2 T milk
2 tsp vanilla extract
2 1/2 cup oats
2 cups milk chocolate chips
1 cup chopped walnuts/pecans (optional)

Preheat oven to 375 degrees.

Combine flour, baking soda, and salt in a medium bowl.

Beat sugars and butter until fluffy. Add eggs one at a time. Mix in vanilla.

Stir in oats, chips, and nuts.

Drop unto cookie sheet and bake for 10-12 minutes.

Let cool just a tad and enjoy!

Peanut Butter Brownie Bites

1 stick( 1/2 cup) of unsalted butter
1/2 bar(2 oz) of Baker's German Sweet Chocolate Bar
1/2 cup granulated sugar
2 eggs (at room temp)
1 tsp Mexican vanilla
2/3 cup all purpose flour
1/4 tsp baking soda
1 (9.2 oz) package of miniature Reese's peanut butter cups
(mini muffin pan and small spoon needed as well)


Preheat oven to 350 degrees.

In a medium saucepan melt butter and chocolate together on low heat. Stir constantly.
Remove from heat and LET COOL.

Add eggs one at a time to the chocolate mixture. Stir. Add vanilla. Stir.

In a small bowl mix together the flour and baking soda. Add to chocolate mix. Stir JUST until combined.

Scoop about a tablespoonful of brownie batter into a mini muffin pan. Unwrap Reese's and press down softly over brownie mix in muffin pan.

Bake 10 minutes at 350. Let cool. Twist counterclockwise to remove brownie bites and enjoy.

Drop rounded spoonfuls of dough unto a cookie sheet and bake for 10 minutes. Let cool 2 minutes on a wire rack and enjoy!

Chocolate2 (to the second power) Chip Cookies

2 cups of all purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
3/4 cup dark brown sugar
1/2 cup granulated sugar
2 eggs
2 sticks(1 cup) butter
1 1/2 tsp McCormick French Vanilla extract(or pure vanilla instead)
1/2 cup EACH of semi sweet chocolate chips, milk chocolate chips, and white chocolate chips
1/2 cup of shredded coconut (optional)


Let butter and eggs sit at room temperature for about 15 minutes for best results.

Preheat oven to 350 degrees.

Mix flour,cocoa powder, baking soda, and salt in a mixing bowl. Set aside.

Combine sugars and butter in a mixing bowl. Mix until well blended.

Add eggs and mix well. Slowly add dry ingredients.

Stir in chips (and coconut if desired).

Drop rounded spoonfuls of dough unto a cookie sheet and bake for 10-12 minutes. Let cool 2 minutes on a wire rack and enjoy!

In the beginning...

In the beginning there was this girl. A girl who loved her sweets very dearly. She went by the nickname of Coconut. Coconut grew up (just a tad) got married and had a few youngsters of her own. Coconut still loves her sweets and bakes every chance she gets. Some say it's to relieve stress.. she says it's just to bless. On this blog you will find recipes that are tried and true.
