Mocha Chip Cookies

2 1/4 cups of all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs
2 sticks(1 cup) butter
1 1/2 tsp mexican vanilla extract(or vanilla instead)
1 packet of NesCafe instant coffee
1 cup milk chocolate chips
1/2 cup of chopped nuts and or/shredded coconut (optional)


Let butter and eggs sit at room temperature for about 15 minutes for best results.

Preheat oven to 350 degrees.

Mix flour, baking soda, and salt in a mixing bowl. Set aside.

Combine sugars and butter in a mixing bowl. Mix until well blended.

Add eggs and instant coffee mix well. Slowly add dry ingredients.

Stir in chocolate chips (and nuts/coconut if desired).

Drop rounded spoonfuls of dough unto a cookie sheet and bake for 10 minutes. Let cool 2 minutes on a wire rack and enjoy!
